I "borrowed" the following recipe for a modern rendition of the famous sloosh from the blog of Phillip K. Frye. Please feel to post your own recipe in response to this post.

Skillet Sloosh

Ingredients -


Scant half teaspoon coarsely ground black pepper
1 large egg
1/4 cup rendered bacon grease, cooled
3 strips thick cut cooked bacon, coarsely chopped
1/4 cup water
1 scant teaspoon molasses
1/4 teaspoon salt
1/2 teaspoon coarsely ground black pepper
3/4 cup cornmeal
1/2 teaspoon liquid smoke (optional)

Preparation -

1. I have a small cast iron dutch oven that I used for this recipe but a cast iron skillet (covered or uncovered) also works very well. Preheat the oven and your cast iron to 400 degrees.

2. Beat the egg with the water, salt, pepper, and molasses then stir in the cornmeal. If you are using liquid smoke add it in this step.

3. Stir in the bacon grease then set aside in a cool place for 10 minutes to allow the mixture to fully hydrate. If it seems to dry add additional water. You want a thick consistency.

4. Fold in the diced bacon and work the mixture to evenly distribute the bacon.

5. Once the cast iron and your oven are at temp, add a little more bacon grease to the bottom of the pan then quickly spoon in the sloosh mixture. spread it evenly into the bottom of the pan. Bake at 400 degrees for 30 minutes, turning the cake once at the 15 minute mark. Serve warm or cold with honey or butter. Remember both honey and butter would have been a luxury.

I encourage you to alter this recipe as you wish. The next time I make this I am going to add both onion and apple to the mixture to see how it turns out.

What do you think flower/corn meal dough fried in bacon grease might taste like? The soldiers seemed to like the stuff - every unit had a version of it.

Yes I remember hearing about it on Ken Burnes Civil War. Sounds nasty.

I first heard of it on Ken Burns Civil WR when the late Shelby Foote related his tale about it.

Same here. That reminds me - I need to watch that series again. Think I'll break out the DVD's in the next few days.
