@O' Be Joyful been holding out on us. The City of Cincinnati has a Civil War district with restaurants... Why did he keep this secret? Why would he keep this information off a Civil War forum... Here is the link: they are all probably closed since Covid 19... but why the secrets OBJ?

So this is Goetta?

It's primarily composed of ground meat and steel-cut oats and flavored with bay leaves, rosemary, salt, pepper and thyme. The dish originated with German settlers who immigrated to the Cincinnati area in the 19th century. Many locals enjoy eating goetta with their eggs and in omelets for breakfast. Some even enjoy goetta sliders and goetta pizza! You're also likely to find some special Cincinnati goetta dishes on local restaurant menus.

Sorry. There is an ice cream shop in Tinley Park called The Plush Horse that is second to none. Scoops of heaven.

They are the only commercial/large scale company in the world that uses the french pot method, 2 gallon batches at a time.

what we have are theese (franconian variant which is probably the best)

"Glier's Goettafest" is an annual culinary festival held in August on the Ohio River waterfront near Newport, Kentucky's Newport on the Levee. The festival celebrates both the dish and Greater Cincinnati's German American heritage. While the main focus of the festival is goetta served in many different ways, it also typically includes music, dancing, and other public entertainment.[13] In 2019 it expanded to two consecutive weekends

Snip... Goetta has USDA rules...

The USDA standards for goetta require that it contain no less than 50% meat


Snip... It seems Pennsylvania and North Carolina have their take on the food...

While similar to Pennsylvanian scrapple and North Carolinian livermush in that it is a dish created by German immigrants and uses a grain product for the purpose of stretching out pork to feed more people, scrapple is made with cornmeal and livermush with either cornmeal or rice rather than the pinhead oats used in goetta.

There is also Oktoberfest Zin-zinn-atti, which is the largest except for Munich. But o/c it was called off last year. :confused:
